::Chocolate Banana Smoothies::

I LOVE these smoothies. They are SO easy and I always keep the ingredients on-hand. It's a quick way to get a little fruit in a kiddo when in a hurry or disguised as a dessert.

2 cups cold 2% milk (use whatever you would usually drink)
1 package (1.4 oz) sugar-free instant chocolate pudding mix (I can't ever find this size, so I use the larger box and divide it in half into snack-sized bags.)
2 Tbsp vanilla extract
2 large ripe frozen bananas, sliced (I slice a banana into chunks and put 2 into freezer bags/containers to freeze--this makes it easy to measure for this smoothie as well as anything else like banana bread.)
2 cups coarsely crushed ice cubes (I almost always leave out the ice)

In a blender, combine the milk, pudding mix and vanilla; cover and process until blended. Add the bananas and ice; cover and process until smooth. Pour into chilled glasses; serve immediately. (Trust me, you want to serve this ASAP-if you don't, the pudding mix starts to get grainy and it isn't yummy.) Yields 4 servings.

  1. Anything to get fruit down them! We blend a load of fruit and put into lolly (I think you call them popsicle) molds, at least two portions of fruit and no complaints. I think I'm ready for my mother of the year award?

  3. We have a lot of smoothies too...especially during the summer. It's great and far more healthy than snow cones or some other high-fructose corn syrup laden treat. I've heard that you can pretty much add any flavor of pudding that suites you. I'm pretty boring and like to keep with whatever is available in sugar-free; but not made with aspartame. The pudding adds a lot of thickness, so it's great if you like a more milkshake-like texture.
